Ricotta Burfi

Raksha Bandhan is just around the corner.  If you are time poor this year, try making this quick and easy ricotta burfi to delight your brother.   This can be whipped up in a short time, is really delicious and super easy to make so you can involve the little ones, with supervision of course.  Garnishing with rose petal imparts a beautiful rose fragrance to the burfis and keeps the rose flavour really subtle but by all means you can add rose water to the mixture  as a variation. What a wonderful way to teach our Hindu traditions!

  • 850 g


  • 1 cup

    milk powder

  • 1/2 cup

    butter or ghee - melted

  • 1 cup

    castor sugar


  • Add the ricotta, milk powder, castor sugar, and cinnamon in a microwave safe bowl and stir to combine well.
  • Microwave the mixture on high for 5 minutes.  Remove from microwave and stir well with a whisk.  Repeat the process every five minutes for 15-20 minutes depending on the power of your microwave, until the mixture comes tighter in a soft thick dough.
  • Pour mixture into a slightly greased tray and sprinkle with ground cardamom.
  • Garnish with chopped pistachios, chopped flaked almond and rose petals.
  • Allow burfi to set for 30minutes.   Cut into squares and allow a further 1hr – 11/2hr for the burfi to set completely.   Refrigerate to hasten the process.
  • Store any leftover burfis in the fridge.
