QUICK AND EASY RICOTTA BURFI

Ingredients
  

  • 850 g

    Ricotta

  • 1 cup

    milk powder

  • 1/2 cup

    butter or ghee - melted

  • 1 cup

    castor sugar

Instructions
 

  • Add the ricotta, milk powder, castor sugar, and cinnamon in a microwave safe bowl and stir to combine well.
  • Microwave the mixture on high for 5 minutes.  Remove from microwave and stir well with a whisk.  Repeat the process every five minutes for 15-20 minutes depending on the power of your microwave, until the mixture comes tighter in a soft thick dough.
  • Pour mixture into a slightly greased tray and sprinkle with ground cardamom.
  • Garnish with chopped pistachios, chopped flaked almond and rose petals.
  • Allow burfi to set for 30minutes.   Cut into squares and allow a further 1hr – 11/2hr for the burfi to set completely.   Refrigerate to hasten the process.
  • Store any leftover burfis in the fridge.
